The IYO Omakase sushi Banco, which shares the entrance with the AALTO restaurant, opens its doors by reservation only. Guests can take a seat at the large counter with 7 seats only, where 2 sushi master chefs cook in front of their eyes, reviving the ancient ritual of Edomae sushi. You do not order from a menu, but rely on the experience of the sushi master Masashi Suzuki who chooses the path for all guests, alternating nigiri, sashimi and traditional Japanese dishes. Omakase, in fact, literally means "I trust you". The service starts at 19.00 or 21.30 and takes place simultaneously for all guests of the counter.
