Nori Way, Italy’s first fully plant-based sushi restaurant, opens in Portanuova on Via Federico Confalonieri, 8/N01.

The menu offers a one-of-a-kind vegetable sushi experience, designed around contrasts in texture and flavor to appeal to every palate, including those less familiar with plant-based cuisine. Marinades, fermentations, and creative vegetable techniques come together to shape a balanced, contemporary, and inclusive dining experience.
